The healthy properties of garlic are due to a natural sulfur components present in its composition. The main precursor of the aroma of garlic is alliin, a volatile compound inactive and toilet. When crushed or cut garlic, alliin becomes allicin, comprising determining the characteristic smell of garlic. It is an appetite stimulant so regularly consume garlic stimulates the gastrointestinal mucosa, thus causing an increase in digestive secretions and bile. This results in better preparation of the digestive tract to digest food.
Used for the preparation of many dishes, sauces, pickles and other gastronomic preparations without including their ingredient garlic either fresh or dried and dehydrated, whole, chopped finely, shredded, thread or mixed with oil. In Spain is typical fried mashed garlic bread and oil with parsley and sticky quality that makes this bulb has excellent ingredient to bind some sauces like pil-pil.
