Black garlic is obtained by placing fresh raw garlic in a proofer with sea water, natural fermentation for 60 to 90 days.

It is best to not have that smell or taste typical for some nasty, raw garlic, especially on the contrary, its texture is soft and tender and pleasant smell is similar to being its candied blackberry taste.
