Chives are one of the " fines herbes " French . Su, thinner and softer than the onion, enhances flavor green salads , tomatoes , marinated fish, soups , beans , tortillas and any recipe with egg .
The leaves are used fresh as a seasoning , adding a delightful touch to mayonnaise, sauces , white cheese and butter with herbs . You can also add to sandwiches with lettuce to enhance its flavor . When applied to soups or stews, should be at the end of cooking to avoid losing their organoleptic qualities.
They can be mixed with onion , parsley or chervil . The young leaves have a slightly pungent and spicy , stronger than the old leaves , similar to onion flavor with lighter scents .
