Processed fruit with a proportion that varies between 60% and 70%, a number always higher than the consumer jams. In contrast, the proportion of sugar is low and never exceeded 30% or 40%. Also, this is the only item added. Nothing more.
First, you select the proper fruit ripening point, cleaned and peeled by hand. Then boil, while corresponding sugar is added and allowed to simmer until desired point. Then remove from heat and mash the pulp just to get a uniform texture.
The last step is to fill the previously sterilized jars, close them tightly and boil them in a water bath to evacuate and ensure perfect sterilization.
