The yam is a genus of tropical plants, whose tuber is widely used for food, being a commodity for human consumption in New Guinea and East Africa. Its use is also important in the Caribbean. In Asia and Africa its cultivation dates back eight thousand years, while in tropical America is cultivated by indigenous peoples since pre-Columbian times.

It is grown by small and medium farmers and the main source of income and employment in many rural areas of the world.

Traditionally valued for its flavor and because it is a scarce commodity, is usually eaten boiled, roasted or mashed.
